Our Process
Every sourdough rests for a minimum of twelve hours in our temperature-controlled proofing room. Shortcuts are the only ingredient we never use.
Our butter arrives daily from North Carolina creameries, our flour is stone-ground within fifty miles, and our eggs come from a single farm in Stokes County.
We bake in batches small enough to control and large enough to serve the community. When the display case empties at two, it empties — that's by design.

Our Story
Château de Lochurst began with a question most bakers stop asking too early: what would this look like if we didn't cut a single corner?
We opened our doors on Waterway Drive with a deck oven, a hand-maintained sourdough starter, and a commitment to the kind of bread that takes time — time to ferment, time to shape, time to bake slowly at high heat until the crust does what it's supposed to do.
Today we serve the Pfafftown community and surrounding towns with the same standard we set on day one. Nothing rushed. Nothing substituted. Just bread, pastry, and groceries we're willing to put our name on.
